Tasting notes

Botivo boasts a unique and discerning taste profile that captivates the palate's depth and complexity. Here are some tasting notes to describe its exceptional flavour:

  • Aroma: The initial aroma entices with an herbaceous bouquet. Rosemary and thyme offer a fragrant opening, complemented by the subtle citrus zest of orange. Underlying these are the earthy tones of gentian and wormwood, creating a rich, inviting nose.

  • Flavour: Botivo presents a harmonious balance of bittersweet and herbal nuances on the palate. The robust backbone of apple cider vinegar provides a tart sharpness, which is beautifully counterbalanced by the natural sweetness of honey. The infusion of fresh botanicals imparts a complex layering of herbal and citrus notes, culminating in a long, dry, refreshing, and sophisticated finish.

  • Texture and Finish: Botivo's texture is remarkably smooth, with a gentle viscosity that coats the mouth, enhancing the drink's intricate flavours. The finish is long and dry, with a lingering bittersweetness and herbal complexity that invites another sip.

  • Overall Impression: This artisanal, non-alcoholic drink offers a sophisticated alternative for those seeking depth and complexity without alcohol. Its all-natural ingredients and meticulous crafting process ensure a unique and memorable tasting experience, making Botivo a standout choice for the discerning drinker.

About Botivo

The Story Behind Botivo

Botivo was born from a vision to create a sophisticated, non-alcoholic drink that doesn't compromise on taste or complexity. Nestled in the heart of Hertfordshire, Lannock Farm became the cradle for this vision, where Sam, Botivo's co-founder, embarked on a journey to blend tradition with innovation. Drawing inspiration from ancient herbal tonics known as oxymels, which used apple cider vinegar and honey infused with medicinal herbs, Sam set out to create a contemporary non-alcoholic elixir that celebrated these timeless practices.

The making of Botivo is a labour of love and precision. It begins with the fermentation of apples harvested from family-run orchards into cider, then vinegar, aged to develop its nuanced flavour profile. Into this base, a carefully selected blend of fresh botanicals - including rosemary, thyme, gentian, wormwood, and orange zest - are infused to extract their vibrant flavours and healing properties. The final touch, a hint of honey, balances the concoction's bittersweet essence, encapsulating the spirit of Botivo in each bottle.

Today, Botivo stands as a testament to the art of drink making, a beacon for those seeking a non-alcoholic option that is both delicious and meaningful. Sam and the Botivo team continue to craft each batch by hand, ensuring that every sip offers a moment of contemplation, celebration, and pure enjoyment, true to its roots and ready for the modern table.
