  3. Then remove from the heat and allow this sugar syrup to cool.
  4. Add the green tea, Fever Tree tonic, lime juice, egg white and ice into a shaker.
  5. Shake vigorously until there are no dragons in sight.
  6. When the sugar syrup mixture has cooled, add to the green tea mix and shake again.
  7. Pour the mixture into a glass and garnish with a sage leaf.
